Are you looking for something sweet during lockdown? Here are some really tasty ideas that will make the most of all the fab fruit that’s available at the moment. And they’ll satisfy that sweet-tooth too!

MINI FRUITY MERINGUE
Serves 1 – approx 175 cals.

30g/1oz Philadelphia Light                 15 ml low fat crème fraiche
5g Half Spoon sugar                            One small peach, skinned and stoned
28g/1oz fresh raspberries                  One meringue nest

Mix together the Philadelphia, crème fraiche and sugar. Finely chop the peach and lightly crush the raspberries with a fork. Stir both fruits into the Philadelphia mixture and spoon into the meringue nest.  

Marie’s Tip: These mini-pavlovas are fab drizzled with raspberry coulis – simply make it by popping a few crushed raspberries into the micro on high for a minute. Don’t fill meringue more than an hour before serving or they will lose their crispness.

DREAMY RASPBERRY CHEESECAKE
Serves 8 – approx 139 cals

1 x 23g twin pack raspberry sugar free jelly
100g/4oz crushed digestives
50g/2oz low fat spread melted
1 x 200g/7oz tub Philly light soft cheese
1 x 200g/7oz pot low fat raspberry yogurt.

 

Dissolve one sachet of the jelly in 150ml/¼ pint) boiling water. Cool in the fridge for 15 minutes. Mix the biscuit crumbs and melted spread together and press into a 20cm (8inch) cake tin. Chill in the freezer for 10 minutes. Whisk the cheese and yogurt until smooth, then mix in the jelly. Pour over the base and chill for 1 hour or until firm. Make up the second jelly sachet to 450ml/¾ pint and pour over the cheesecake. Chill for 1 hour or until set. Serve topped with a few raspberries.

INDIVIDUAL STRAWBERRY CHEESECAKES
Serves 2 – approx 196

4 low fat digestive biscuits                             50g/2oz Philadelphia Light
3 – 4 large strawberries, sliced

For the quickest dessert around, spread the Philadelphia onto the digestive biscuits and top with sliced strawberries. For an alternative version, use ginger nut biscuits and top with your favourite fresh fruit. Why not melt a teaspoon of low sugar jam and drizzle over cheesecakes before serving.
