Here we are still in lockdown – can you believe it! Here are some recipes for a quick and tasty meal while dining during lockdown. An opportunity to ring the changes and try something a little different.

Spicy Parsnip Soup
Serves 4 – approx 110 cals per serving                                               

Low cal cooking spray
2 onions, chopped
1kg/2lb parsnips, peeled and diced into small cubes
1 tbsp curry paste or powder to taste (The Mayflower Curry Sauce would be fab)
1½ litres hot good quality vegetable stock
100g/3½oz Philadelphia Light Cream Cheese
Freshly ground black pepper
Chopped leaf parsley to garnish

Mist large saucepan with one cal cooking spray. Add the onions and cook over a moderate heat for 1-2 minutes until softened. Add the parsnips and cook, covered, over a low heat for 5 minutes with lid on to sweat vegetables. Stir in the curry and cook for a minute and then add the hot stock. Cover and simmer for 20-25 minutes until the parsnips are soft.  Add three-quarters of the Philly to the soup and blitz with a blender until smooth. Season to taste. Serve with the remaining Philly stirred into the soup and garnish with fresh parsley.

Pork Chops with Creamy Cider Sauce
Serves 4 – 300 cals per serving

4 x 112g/4oz pork loin chops                      750g/1½ lbs potatoes
2 tbsp wholegrain mustard                         4fl oz dry cider                       
low fat cooking spray                                   pinch thyme
168g/6oz low fat cream cheese (e.g. Philly extra light)    

Mist large frying pan with low fat spray and fry chops for 5 mins on each side. Pour over cider and simmer for 3 mins.  Whisk in 112g/4oz of cheese, thyme and 2fl oz water. Simmer until chops are thoroughly cooked adding a little more water if necessary. Meanwhile cook potatoes and mash with remainder of cream cheese and mustard until smooth.  Serve chops with mashed potato, lots of free veg and a drizzle of the creamy sauce. 

Angel Delight Sundaes – Banoffee Pie
Serves 4 – approx 200 cals per portion

Make up a low-sugar butterscotch Angel Delight and split it between 4 glasses, top with a little sliced banana and aerosol cream. Crush a digestive biscuit until it resembles breadcrumbs and sprinkle over the four desserts.

…And with your meal
Remember, if you enjoy a glass of prosecco with your meal, a large glass is 180 cals and a bottle 540 cals!! We all know that gin is a favourite and most flavours for a  50 ml measure is approx 100 cals – and don’t forget the tonic at 56 cals.
