Serves 1 – approx. 300 calories
Warburtons square wholemeal bread wrap Tomato puree or ketchup
2oz / 56g sliced ham, diced 2oz / 56g tinned pineapple slices in own juice
1oz / 30g Philly Light (individual pots are ideal)
Place the wrap on a baking tray that has been misted with low calorie cooking spray. Spread with the tomato puree or ketchup and arrange the ham and pineapple pieces over the top. Dot teaspoons of Philly over the pizza. Bake at 200c/Gas Mark 6 for about 10 minutes or until crispy. Serve with lots of crisp salad.
Salmon Fish Cakes
Serves 4 – 200 calories per portion
16oz / 450g potatoes, cut into large chunks 7½oz / 213g tin wild red salmon, drained
2 tbsp chopped parsley ( or 1 tsp dried parsley) 1 medium egg, beaten
1 tbsp flour
Boil the potatoes for 10 – 12 minutes or until tender, then drain and return to the pan. Mash well. Stir in the salmon and parsley, season well and add enough of the egg to bind the mixture together. Divide into 4 and press into rounds. Dust in the flour and shallow fry until golden.
Marie’s Tip – for convenience, these can be frozen.
Angel Delight Sundaes
Serves 4 – approx.. 200 calories per portion
Make up a low sugar butterscotch Angel Delight and split between 4 glasses. Top with a little sliced banana, some squirty cream. Crush a digestive biscuit and sprinkle between the 4 glasses. This is a lovely alternative to Banoffee pie.
Cut up some strawberries or raspberries and place in four glasses. Make up a strawberry or raspberry Angel Delight and split between the glasses. Top with a little squirty cream and grated chocolate.
As an alternative, mix the fruit and Angel Delight together with a crushed meringue nest for an Eton Mess type dessert.
