Lots of celebrations to look forward to shrove Tuesday on the 16th February.  Our Slimtone recipe fpr pancakes is another favourite and can be enjoyed as a tasty dessert at any time.

PANCAKES (basic recipe)   Makes 8-10 pancakes

4 oz plain flour                                 pinch of salt

½ pint skimmed milk                       low fat cooking spray

Lemon juice                                     1 medium size egg

Sieve flour and salt into bowl, add egg and half of the skimmed milk and beat to a smooth creamy batter.  Stir in the remaining milk.  Mist non-stick pan with cooking spray, pour in 2-3 tblspns of the batter mixture (enough to cover the base of the pan evenly) cook over a medium heat until golden brown, toss or turn and fry other side.  Keep warm between two plates over a pan of simmering water.  If using a 7” pan this mixture will make 10 pancakes @ 60 cals each.  If using 8-9” pan this mixture will make 8 pancakes @ 75 cals each.

Don’t forget your one calorie cooking spray and Jif lemon…

A squeeze of lemon juice with a sprinkling of sugar is all very nice, but lets get creative . . . .

Summer Fruit Pancake – Serves 1

mix together 2oz each chopped raspberries, blueberries and strawberries.  Stir in 2tbsp reduced fat fromage frais and a drizzle of honey.  Spoon over a cooked pancake.  (168 cals, 2.4g Fat)
