Hope you are all enjoying the Jubillee Celebration and I know you will enjoy the following recipe for Low Fat Cup Cakes which are a favourite with our Slimtone members.

Fat Free Cup Cakes

Makes 12 – Cup cakes approx 80 cals per cake

 3 medium eggs                         3oz/75g caster sugar

3oz/75g self raising flour

Line a 12 hole bun tin with cases, fill each case ¾ full and bake for 10 mins until firm to touch. To make it into chocolate cup cakes, take out 1 tblspn flour and add 1 tblspn cocoa powder.

You can decorate with any of the following which Julie from our Maesteg class has kindly provided for us.

 **Just before serving place a tsp of the low fat weight watchers cream(whisk well to thicken)  on top of a cake and a sliced strawberry for decoration.

 **Spread a tsp of chocolate Philly over cakes and top with grated white chocolate. (The small bars of Milky Way are ideal.)

**Spread 1 tsp seedless low sugar jam over cake and a tiny sprinkle of coconut
**Mix well together a tsp of extra light Philly with 1 teaspoon of icing sugar, and cover the top of a cake you can flavour with lemon or orange zest…(avoid using the juice as this makes the topping to thin).  This works very well if you also add any citrus juice and  zest to the cake mix before baking.
