Yesterday was a beautiful sunny day and it looks as if today will be too – let’s hope it continues. Everything looks and feels so much better when there’s a bit of sunshine around, doesn’t it.

There’s a lot of sunshine in our classes at the moment too. We’ve had some great weight losses with so many members getting to their target weight – whether that is just a few pounds, or 3 or 4 stone. Well done to everyone, it is a fantastic achievement. We’ll be sharing some of our Slimtone success stories over the next couple of weeks and are kicking off with Sue this week.

Sue reached her target weight some time ago and has kept it off since then. Here’s what she has to say.

“I was delighted when Marie asked me to run the Danymynydd Slimtone class. I first joined Marie’s class when I was in my 30s and at least 2 stone overweight! It has been an incredible journey to lose those 2 stone and it has changed my life completely! I’ve made some wonderful lifelong friends and I feel so much fitter and healthier too.

Isn’t it great to hear Sue’s story. As she says, the Slimtone Lifestyle Plan is easy to follow and suitable for all the family. One of our members’ favourite recipes is the Chicken and Mushroom Curry. Why not try it for yourself, I’m sure the whole family will enjoy it!

Chicken and Mushroom Curry
Serves 4 – approx 320 calories per serving with cooked rice

450g/1lb uncooked diced boneless chicken breast
2 tbsp curry paste
1 medium onion, chopped
2 tsp curry powder
2 cloves garlic, crushed
336g/12 oz mushrooms, sliced
1 tbsp flour, to thicken
Salt, to season
450ml/¾ pint stock, made with chicken stock cube 

In a non-stick pan, dry fry the chicken, onion, garlic and mushrooms for about 5 minutes. Once the juices start to flow, add the curry powder and paste. Stir well to ensure all the chicken and vegetables are coated with the spices. Cook for 2 – 3 minutes. Add the stock, bring to the boil, then turn down the heat, cover and simmer for 35 – 45 minutes (ensure the chicken is cooked through). Mix the flour with a little water to form a paste and stir into the curry to thicken. Cook for a further 4 – 5 minutes until thick.
Serve with 168g/6 oz cooked rice per person.
