Christmas wouldn’t really be Christmas without a slice of Christmas cake, would it? And with our scrumptious Slimtone Christmas cake recipe you don’t have to miss out. It’s just 220 calories per slice, instead of a whacking 400 calories for a traditional cake.

Here’s the recipe for this Slimtone festive favourite:

Slimtone Christmas Cake
Serves 20 – approx.. 220 cals per serving

400g/14oz sultanas                                          1 tsp mixed spice
28g/1oz candied peel                                      400g/14oz SR flour
100g/3½oz glace cherries, halved                 50ml Port, Brandy or Rum
200g/7oz brown sugar                                    ½ tsp cinnamon
2 large eggs                                                       300ml/½ pint cold tea (3 bags)
50g/2oz chopped mixed nuts                        25ml medium Sherry

Mist a 10” x 5” loaf tin with low cal cooking spray (or a round cake tin). Soak fruit in the cold tea liquid and leave overnight or for a few hours. Remove the teabags and add the rest of the ingredients to the fruit. Mix well. If the mixture is too dry, add a little more water (or booze!). Turn the mixture into the loaf tin and cook for 1 – 1½ hours 170˚C/325˚F/Gas 3. Wrap the outside of the tin with foil, as there is no fat in the mixture, this will keep the cake more moist on the outside.

Trifle, Trifle, Fol-de-riddle-Triffle!

And it’s not just Christmas cake that has the Slimtone Make-over – here’s a delicious Christmas trifle that will put a smile on everyone’s face.

Christmas Trifle
Serves 6 – approx.. 200 cals per serving (3g fat per serving)

2 sugar-free strawberry jellies                      4 trifle sponges
1 glass sherry                                                   Muller Light strawberry yoghurt
Carton of low fat custard                               1 packet sugar-free Dream Topping
Strawberries to decorate

Place sponge fingers in a trifle dish and pour over sherry. Make up 1 sugar-free jelly and pour into the dish. Leave to set. Make up the second jelly with half the amount of water and leave to cool. Whisk in the yoghurt. Pour over the jelly and leave to set. Spoon over the low-fat custard. Make up the Dream Topping with skimmed milk and spoon over the custard. Decorate with sliced strawberries.
