As you know, I’m always advising members to ‘eat more veggies!’ There are lots of reasons for this – vegetables are low in fat, high in fibre and rich in vitamins, minerals and other nutrients that are vital for good health. They also have a high water content which, as well as being low in G.I., satisfies the appetite with a minimum of calories. And vegetables are “free” on the Slimtone Lifestyle Plan, so a great way to fill up without getting extra calories!
Of course, we’re hearing more and more about how a plant-based diet is good for the planet, as well as for our own health. Plant-based food needs less land, less water and creates less greenhouse gas which helps to prevent climate change.
Quite a few Slimtone members are vegetarian and others of you are choosing to eat less meat for a whole range of reasons. At Slimtone, that’s easy to accommodate – after all, the Lifestyle Plan is designed for every lifestyle and to suit every taste! You’ll find a full week’s vegetarian menu on page 76 of your Lifestyle Plan with a tasty selection of meals to mix and match. Many of the recipes in our weekly talks are meat and fish-free too. One of my favourites is this Sweet and Sour Stir Fry.
Make up a marinade with 1 teaspoon of soy sauce, 1 tablespoon or orange juice and 1 tablespoon of water, 1 teaspoon of tomato puree, 1 teaspoon wine vinegar, 1 teaspoon sugar and ½ teaspoon cornflour. Leave 56g/2oz Quorn cubes in the marinade for at least an hour. Stir fry 2 chopped spring onions, ½ chopped chilli and 1 teaspoon grated fresh ginger in 1 teaspoon oil. Add a selection of free vegetables and cook for 2 minutes or until the vegetables are cooked but crisp. Add the Quorn and remaining marinade liquid and cook for a further 2 – 3 minutes. Serve with 168g/6oz cooked rice for a tasty main meal that all the family will enjoy.
